Sounds like a normal 18 month old. You have to stand your ground. So what if he screams and cries.....that never hurt anyone. Let him scream and cry.....he will throw his fit, realize that you are not going to give in and then go off and play with something he can play with. Now that being said you can also get creative. When you are cooking give him some pots and pans and spoons to play with let him cook or make noise with them. At 18 months his attention span is not going to be very long so he is going to hop from one thing to the next. Just try to have different things for him to do/play with. And then stand firm on the things that are not toys or things you don't want him to have. Expect a fit, but know that it won't last forever and by not giving in to the fit you are teaching him that fits don't get what he wants and that there are boundaries.
My third has a very LOUD scream and I was "that lady" at the grocery store one time. My daughter wanted to open a box of Cheerios that we were buying. That in itself would not be a big deal, but I knew that if I allowed it once she would want to do that every time. I did not want that to become a norm, so I put up with the SCREAMING fit she threw and finished my shopping. I set the boundary and now when we go shopping she does not throw a bit fit for not opening the boxes......that is not to say we don't have other fits about other things.
