Alternatives for Milk allergy... particulary looking for hemp based alternatives... where to buy?

So.... Should I start at the very begining????

My daughter is just over 3 years old, little Rose. When she was a baby... she has a reaction to my breast milk... and I had to stop breast feeding and put her on formula... she had a reaction... and we had to switch to soy. We thought that her allergy had cleared up at 1 year.... but apparently we were wrong?

At 2 1/2 she got into Ranch dressing... she broke out in WELTS! I had never seen anything like it! Bright red welts wherever the ranch dressing had touched her! We had noticed prior to this that she was red around the mouth after eatting at times... but didn't think much of it. Then it dawned on me... she was allergic to something in the ranch.... but what?

I was talking to a nurse friend of mine about Rose having fairly constant loose stools and some of the skin issues (rashes, etc.) She told me to pay attention to what she was eatting... because it sounded like a food allergy. Sure enough... I discovered that the more milk she had... the worse it was!

After calling the peditrician, it was determined that she should not have milk... and it would be best to start with the small things and continue to remove items until it was cleared up. Well... it's getting better... but there are some things I still need to fix....

She LOVES cheese and chocolate. Chocolate is the only thing that makes soy milk tolerable to her. However, soy milk is horrible to cook with... so we have been cooking with hemp milk, and have been very successful with that. We are looking for cheese alernatives... and other milk alternatives... and I would love to find the hemp stuff... but I can't find it!!!!! HELP!

Have you tried other milk alternatives? Almond milk, rice milk, coconut milk. Some are more affordable than others, but almond milk is very enjoyable without any chocolate. And I learned on my daughter than switching it up made what she thought was the nastiest milk in the world much better when she tasted coconut milk (in her opinion, coconut milk is now the nastiest stuff and she will drink all other alternatives :))... worth a try!

If she is ok on cheese, maybe Tofu?
