Lunch Ideas for a 16 month old

I am wondering what all of you feed you 16 month old for lunch. I feel I can never come up with good ideas. I do not want him to get sick of eating the same thing all of the time?

Most times what ever we had for dinner the night before. If not we will whip up:
Annie's Organic mac 'n' cheese and add peas to it or tuna to it or both. Or add diced ham.
Cheese ravioli with butter and a veg
Grilled cheese
soup with no broth
meatballs w/ light sauce
Hebrew National franks skin removed w/ baked beans or mac n cheese

My son LOVES english muffin pizza. I put different toppings on it every time because there are so many veggies you don't have to worry about making the same thing twice.

My son is also a very big fan of butternut and acorn squash so I would usually make him that half a sandwich of any kind. I would give him 7 or 8 pieces of cubed squash and freeze the rest for another time.

Squash: Make sure you leave yourself enough time to do this. I suggest doing it the night before and either microwaving it at lunch time or putting it in the oven for a little while to heat it up.
-Preheat the oven to 350 deg. Farenheit (177 cel.).
-Cut the squash in half and remove the seeds. Then, put a little bit of butter on the squash and sprinkle it with a little brown sugar.
-Once the oven is heated, put in the squash. It should take at least 10 minutes but how long exactly varies with the thickness of the squash and how hot or cold your oven runs.
-Check back periodically and you'll know it's done when you can easily put a fork through the thickest part, almost like when you can tell a potato is done.
-Take the squash out of the oven and let it cool. Once it's cool, remove the skin, it should come off easily with a fork or butter knife.
-Cube and serve or refrigerate. You can also freeze what's not going to be used right then so it doesn't go bad.

All sorts of things! My son is 18mos now, but has never been picky. We do sandwiches (pb & j, tuna salad, egg salad) and grilled sanwiches (cheese, tomato, ham) sometimes he just like sandwich meat plain, he likes all veggies and fruits, once and a while we'll do breakfast for lunch/dinner and have scrambled eggs or pancakes, oatmeal is always a favorite of his, quesadillas, hard boiled eggs, fish sticks, mini pizzas, yogurt, rice (brown and white), pasta salads or just buttered noodles. I just try not to limit the things I give him, I don't want him to be picky, so if I'm having leftovers for lunch I'll give him the same thing. It's always a special treat if we do fruit smoothies for dessert! Hope that helps. :)
