What about diabetic recipes???

My fiance is diabetic and he does most of the cooking but sometimes I would really like to make him a different kind of healthy meal. Wondering if anyone else knows some good recipes for diabetics?

Also, you can get low carb tortillas and grind them up to use as a bread crumb topping for dishes like chicken Parmesan. For Tex Mex I make an awesome enchilada pie:

3 low carb tortillas (6 carbs each)

Enchilada sauce (see second recipe; you won't use all of it)

1 pound ground beef

1 packet taco seasoning mix (about 3 carbs, depending on brand)

Shredded cheddar cheese (as much or as little as you want, about 1.5 carbs per cup)

Enchilada sauce (about 7 carbs):

1 8oz can tomato sauce

1 TBLSPN chili powder

2 tsps ground cumin

2 tsps garlic powder

2 tsps onion powder

Preheat oven to 350 F and grease a 9 inch pie plate. Prepare enchilada sauce and set aside. Prepare taco meat per package instructions. Place one tortilla in pie plate, spoon about 2 tablespoons enchilada sauce on top and spread evenly. Cover with 1/2 the taco meat, and as much cheese as you like. Place second tortilla on top of cheese, cover with 2 tablespoons enchilada sauce, the rest of the taco meat, cheese. Add last tortilla on top, cover with 2 table spoons enchilada sauce and remaining cheese. Bake for 15 minutes or until cheese is melted and dish is heated through. Slice and serve...I like it with sour cream. :)

Carbs per serving (if cut into 1/8ths): 2.375

What about stir fries or casseroles or fish???

You can mix up the meat you use like lean beef instead of chicken and use loads of fresh veggies in it and put your own flavouring through it.

My step dad is a diabetic but he really doesn't watch his diet the way he is supposed to.

He usually does the cooking and we do eat alot of different stuff, for the most part though we stay away from pasta noodles, white sauces, white food and stick to alot of fruit and veggies. We do eat alot of chicken though. I did some research online and found some just really had wondered if other moms are dealing with diabetes in there homes. thanks ladies for your comments
