What are some interesting meals to cook when you work and are a single parent, but are quick, fun and easy?

Kids like chicken fingers and depending on how old your kids are they are could help... This one is a modified WW recipie I love - and it only takes 12 minutes to bake.

I would try and make things ahead of time - prep work for meals Sunday for the rest of the week. But I have so been NOT successful at this... dinner = hard work.



Spicy (or unspicy) Chicken fingers:

1. Buy the frozen chicken tenderloins at the store and defrost as many as you'll want.

2. Mix in bowl 1 TB honey mustard or Dijon mustard or plain old mustard and 1 TB milk product (I use soy - I have used Mocha Mix - it all works). If you need to increase this just add one for one.

3. In another shallow dish put bread crumbs - I like the spicy ones you can find at ethnic food stores or the local corner store in some Latino neighborhoods. My DH dosen't so I mix half plain and half spicy.

4. Coat chicken in mustard/milk and coat with bread crumbs on both sides. This is the part that kids would like to help with. Very mesy.

5. Place in a greased 13x9 inch pan. Bake at 350 for 6 minutes, turn and bake for another 6 minutes - or until done.

6. I serve with rice, more filling.

If I were you I would invest in a Crockpot(Slow Cooker). They are safe and they work by cooking below boiling point. I use mine all the time. I start it in the morning, go to work and by the end of the day, dinner is done and the meat is so tender. I cook Pasta Sauces in it, soups, casseroles, roast chicken, beef and lamb. You can cook a heap of food. Check out some Slow Cooker recipe books in your local book store or shopping centre.



Away from the slow cooker, pasta bake is quick and easy. Spaghetti Cabonara. Tortilla Pie, Taco's. I have a few recipe books on Quick and Easy meals. Where are you from? I live in Melbourne, Australia. I subscribe to a Recipe Magazine called Super Food Ideas, it is terrific, a cook from those books a lot.
