I have three children, 32, 31 and 26. We were empty nesters for all of one year, then they started rotating back in and out. (In between grad school, military service, career changes, etc.) Don't convert all of their rooms yet, especially if they're not married. If they are married, your empty nest may soon be full of grandchildren, so enjoy your solitude while you can! Meanwhile, cultivate friendships or hobbies which you may not have had time for when the kids were home, or consider turning an interest into a career.
That's what I've done with Habitudes, my family organizing website (http://www.habitudes.info). Gotta go. Son #2, who just graduated from business school but found out he's being deployed to Iraq on July 18, is arriving tonight for a month long stay before he leaves.
