Meals

I am so tired after work that i just don't want to cook....i would be happy with a cup of soup, or not even eating...but i have to feed the family... it's become a chore i resent and i used to love cooking...any suggestions for easy meals or what to do?

i always keep frozen veggies, rice and salad stuff handy to make a quick and healthy side dish. and i like to keep different pastas and sauces ready because that is probably the easiest and fastest meal to make! also, when i by meat i buy in bulk and i seperate it at home before it goes in the freezer. i put what is needed for one meal in seperate freezer bags. i don't ever really take the time to cut anything up before hand because i'm always changing my mind about what to make. but i find its alot easier to prep a meal when you keep some trusty stand-bys around!

I cook two meals on Sunday. I put one meal in the fridge and the other I feed to the family. On Monday, I come home from work and pop the second meal in the microwave. While the meal is warming, or later in the evening, I prepare another meal for the next day. I find this to be quicker and less stressfull. I'm able to feed the kids quickly, rest for a bit, and then take my time preparing a meal for the next day. I also like to precook tons of meat that I use throughout the week. That's one less thing I have to worry about cooking. I can just grab a handfull of pre-grilled chicken breast and throw it into some pasta or a salad.

Try slow cooker meals where you put everything in before you go to work and its all done when you get home or have hubby bring take-out sometimes. I have been married almost 23 years, 6 kids, and i basically hate cooking now so i have a lot of go-for-what-you-know days and every saturday my husband gets takeout to give me a break. It helps.
